Baked Apple Pancake

RECIPE DETAILS

A perfect country-style pancake filled with spice – especially great in the fall with fresh apples!

3   apples, peeled
2 Tbsp  Highwood Crossing Organic Canola Oil or butter
1/2 cup   brown sugar
1/2 tsp   cinnamon
1   egg
1/2 cup  Highwood Crossing Organic Muffin & Pancake Mix
1/2 cup   milk


Preheat oven to 350ºF.


Sauté fruit in oil, sugar & cinnamon for about 10 minutes or until soft. 


Place in 8×8 pan or pie plate or cast-iron pan.


Beat egg, muffin mix and milk until well blended. Pour on top of fruit.


Bake 35 minutes. Serve in wedges and dust with icing sugar.
