Warm Maple Apple Cobbler

A soothing and tasty comfort food packed with fruit and loaded with opportunities to adapt the basic recipe using what you have available or what is in season.
5 cups apples, peeled and sliced
1/2 cup maple syrup or brown sugar
1/3 cup raisins, dried cranberries or other dried fruit
1/2 cup Highwood Crossing Organic Muffin and Pancake Mix
2 Tbsp Highwood Crossing Organic Flax Seed ground*
1/4 cup granulated sugar
1/4 cup butter, softened and cubed
1/2 cup buttermilk
1 egg
1 Tbsp vanilla
*1 Tbsp of seeds will grind up to make up the 2 tablespoons of ground flax seed required for this recipe
Preheat oven to 375ºF.
In a saucepan bring apples and maple syrup to a boil; simmer 3 minutes or until softened. Add raisins. Pour into a greased 8” square baking dish, 9” cake pan or cast-iron skillet. Recipes easily can be doubled and put in a 9x13” pan.
In a bowl combine Highwood Crossing Organic Muffin and Pancake Mix, ground flax seed and sugar. Cut in butter to make fine crumbs. In a bowl combine buttermilk, egg and vanilla. Pour over flour mixture; stir until just combined.
Drop mixture by large spoonful’s onto warm apple slices. Bake about 40 - 45 minutes or until tops are golden and a toothpick inserted in center comes out clean.
Great served warm with ice cream for dessert or for a weekend breakfast topped with yogurt. Drizzle with maple syrup if desired.
Variation ideas: Use a combination of apples and pears or apples and cranberries or plums and nectarines! Add 1 teaspoon cinnamon or lemon zest for a flavor boost or add 1/3 cup toasted chopped pecans for crunch!
