Chocolate Zucchini Cake

Baking with vegetables produces some of our favorite treats from the oven!


1/4 cup  butter
1/2 cup  Highwood Crossing Organic Canola Oil
1 3/4 cup  sugar
2  eggs
1/2 cup  buttermilk
2 1/2 cup  Highwood Crossing Organic Muffin and Pancake Mix
1/4 cup  cocoa
1/2 tsp  cloves
1/2 tsp  cinnamon
2 cups  zucchini, grated


In a small bowl mix butter, oil, buttermilk, sugar and beat in eggs.


In another bowl, combine dry ingredients and add in zucchini.


Add egg mixture to the zucchini mixture and pour into a greased bundt pan or a 9×5 loaf pan.


Bake at 350ºF for 60 minutes. Makes approximately 8 Servings.
